Review: Makars Mash

Have you ever walked into a restaurant and felt an instant connection with the mood, the service, and every dish that is placed on your table? That was my experience as I stepped into this gem for a magical Scottish culinary journey. I knew my trip had to include the traditional fare and having watched the "Outlander" series (several times, BTW), I had some kind of romantically conceived notion about its rustic history. The glens, the lochs, the castles - all rolled into a ball of savory pudding with herbs, spices, organ meat, and oats, then steamed to perfection in a casing made from the animal's stomach, although now, most places use an artificial casing. Let me take you through my delightful adventure that will surely have your taste buds tingling with curiosity and your heart yearning for more.


From the moment I stepped through the threshold of this quaint eatery without a reservation (I might add), I was greeted by a warm smile that instantly made me feel at ease. I honestly didn't realize that lunch reservations in Edinburgh, in October, would be required...but note, that I have seen the error of my ways. Ultimately, they were able to seat us quite quickly because we were just a party of two. The simple modèrn decor and warm lighting created an inviting atmosphere that set the stage for a truly memorable experience. As I settled into my chair, I couldn't help but admire the attention to detail in every corner of the restaurant, reflecting a passion for food and aesthetics.


After being seated, we looked over the menu - I knew we were going to order the famous Royal Beef Haggis. Still, for an additional entree, we were spoiled for choice with an array of dishes that promised to tantalize the taste buds. Each dish was carefully curated, blending traditional ingredients with a modern twist that showcased the chef's innovative approach to culinary skill. The " mash " choices made me salivate as I read their descriptions. I opted for the Colcannon -smoked bacon and spring onion. My nephew chose the Beef Shoulder with the cheddar cheese mash.


The first bite of haggis was a burst of flavors on my palate. The perfect balance of warm and savory components left me craving more, setting the tone for the culinary journey that awaited me. According to the menu, "There’s a Scottish myth that haggis only comes from sheep, it’s actually made from any animal depending on your status. For a King of Scotland, there is no other choice but to use prime Scotch Beef!" It was glorious... The oats in the dish give it a very earthly quality and quite hearty to boot. Lastly, I need to talk about the mustard and cream sauce drizzled over the top... well maybe I can't because quite honestly, it was so good - I wrote in my journal, "speechless". It was a true masterpiece, beautifully presented and exuding the aroma of carefully selected spices and ingredients.


The Beef Shoulder was braised until it fell apart, while the gravy, sprinkled with horseradish, was tangy and rich and glorious and undeniably, something you could bathe in. Sitting on top of a mound of cheesy mashed potatoes - it was another delicious selection.


After we had licked our plates and were pretty full, we tackled the dessert menu. We ended up getting just one and sharing it. The winner - the Sticky Toffee Pudding with Butterscotch Sauce. I have to say, it was the perfect ending to a terrific meal. Not too heavy and I do love dates!


As I reflected on my dining experience, I was struck by the passion and dedication that infused every aspect of the meal. Makars is a restaurant that uses the classic "Farm to Table" model, using local farms for their meat and veg. From the friendly staff to the charming flavors, every detail was meticulously curated to create a memorable meal for every guest. It was more than just a meal; it was a culinary journey that touched my senses and left me longing for my next visit.


In conclusion, my visit to this little establishment was a true delight for the senses, offering an unparalleled dining experience that was a symphony of textures. If you're looking for a culinary adventure that goes beyond just food, I highly recommend stepping into this enchanting world of gastronomic wonders. Trust me; you won't be disappointed!
